Ingredients
- 6 Large FARMHOUSE EGGS®
- 1 Red bell pepper
- 6 Hard taco shells
- 1 Avocado
- Handful shredded cheese
- Handful red cabbage
- Sour cream (Optional)
- Taco sauce (Optional)
Preparation
- First, dice vegetables and arranging toppings in rainbow order.
- Scramble eggs for the “yellow” rainbow color.
- Sauté bell pepper until softened.
- Fill taco shells by arranging in layers, starting with red or purple at the bottom.
- Top with taco sauce and/or sour cream.
