Ingredients
- 3 cups quick cook or old-fashioned oats
- ¾ teaspoon cinnamon
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 Large FARMHOUSE EGGS®
- 1½ cups whole milk
- ¼ cup honey
- 1 teaspoon vanilla extract
- 2 large bananas mashed
Preparation
- Preheat oven to 350℉ and grease a 12-count muffin tin with nonstick spray.
- In a large bowl, whisk together the dry ingredients.
- Add in the wet ingredients and combine.
- Divide the batter into 3 bowls and add in desired mix-ins such as chocolate chips, apples, raspberries, etc.
- Fill greased muffin tin wells with batter. Top muffins with additional mix-ins if desired.
- Bake for 25-30 minutes or until muffins are golden-brown, and springy. A tester inserted into the center of the muffin should be clean when removed.
- Allow muffins to cool before enjoying.
